Ingredients

  • 700 g/1 1/2lb potatoes

  • Salt

  • 150 ml/1/4 pint extra-virgin olive oil

  • 250-350 ml/8-12 fl oz hot milk (depending on the consistency of the potatoes)

  • Freshly grated nutmeg

Serves 4


Method:

  1. Peel the potatoes, cut in half and boil in lightly salted water until tender. Drain and let the steam evaporate.

  2. Put the potatoes through a potato press or mash with a potato masher, and stir in the olive oil.

  3. Add the hot milk, a little at a time, while stirring constantly. Season with salt and nutmeg.

Note: The most important thing when preparing mashed potatoes is to stir in the milk, butter or oil using a long-handled cooking spoon. Using a blender or whisk will make the mashed potatoes coarse.
