Ingredients

  • 1 kg/2 lb spinach

  • 3 tablespoons olive oil

  • 1 small Tuscan pepper

  • 1 garlic clove, chopped

  • Salt

  • Juice of 1 lemon, organically grown

Serves 4


Method:

  1. Rinse the spinach thoroughly and remove any coarse stems. Drain well in a colander.

  2. Heat the olive oil and quickly sauté the crushed Tuscan pepper and garlic.

  3. Add the spinach and salt. Cover and leave to wilt.

  4. Just before serving, season with lemon juice. This is very good with sautéed salmon.
