Asparagus Recipe
Ingredients

500 g/1 lb white
asparagus, peeled

500 g/1 lb green
asparagus, peeled

Salt
-
A pinch of sugar
-
Juice of 1 lemon,
organically grown
-
60 g/2 oz unsalted
butter
-
60 g/2 oz grated baguette
-
Freshly ground
white pepper
-
1 tablespoon chopped chervil
Serves 4
Method:
-
Cut the white and green asparagus stalks into 4
cm/1 1/2 inch pieces.

Bring some water to the boil
and add the asparagus together with the salt, sugar,
lemon juice and 20 g/2/3 oz butter.

Cook for about 5
minutes until the asparagus is just tender, then
quickly rinse in ice-cold water, drain and
set aside.

Sauté the
grated baguette in the remaining butter until golden
brown and season with salt and pepper.

Stir in the
well-drained asparagus pieces and chervil and serve.
Note: A
light side dish
for veal schnitzel, chicken breast
or
steamed
fish.
