Whole Salmon Baked in The Oven Recipe
Ingredients

1 fennel bulb
-
1 leek, white
part only
-
3 celery stalks
-
Salt
-
1
x 2.5 kg/5 lb
whole raw salmon, cleaned,
head and tail
left on
-
Freshly ground
white pepper
-
Juice and grated rind of
1 organic lemon, organically grown
-
1 tablespoon crushed
coriander seeds
-
1 tablespoon crushed
fennel seeds
-
1 small bunch of
dill, chopped
-
100 g/3 1/2
oz unsalted
butter
-
250 ml/8 fl oz dry
white wine
Serves 10-12
Method:
-
Rinse and clean the fennel, leek (white part only)
and
celery and cut into julienne strips. Blanch for o
seconds in boiling salted water and rinse with old
water.

Scale the salmon, rinse
thoroughly with cold water, tat dry and
generously rub with salt, pepper and lemon juice.

Fill
salmon with the julienned vegetables, coriander and
fennel seeds, dill sprigs and butter. Preheat the oven
to 160°C (325°F), Gas Mark 3.

Generously line a baking sheet with
aluminum foil and
brush with butter.
-
Place the salmon on the sheet and
cover with white wine. Close the foil tightly and bake
in a preheated oven for about 45 minutes.

Arrange on a
warm plate, top with the baking juices and sprinkle with
chopped dill.

Serve with small dill potatoes and white
wine sauce blended with Hollandaise sauce and whipped
cream, if desired.
