Spinach Gnocchi with Smoked Salmon and Rocket Salad Recipe
Ingredients

oz fresh
spinach, rinsed and trimmed

1 egg yolk
-
450 g/14
oz
potatoes, boiled
-
75 g/2 1/2 oz plain flour
-
50 g/2 oz semolina
-
Salt
-
250 g/8
oz raw salmon
fillet, without skin

200 ml/7
fl oz
white wine sauce (refer recipe)

3 tablespoons
double cream
-
1 bunch of rocket
to garnish

Coarsely ground black pepper
Serves 4
Method:
-
Rinse the spinach several times in cold water. Boil the
spinach leaves, drain and rinse under cold water to
retain the fresh green color.

Press out as much
moisture as possible and process the spinach and egg
yolk in a food processor until finely pureed.
Pass the potatoes through
a food mill, or mash them.

Transfer to a lightly floured
flat surface and work in the pureed spinach, flour,
semolina and a pinch of salt until the mixture forms a
smooth dough.

Roll the pieces of the dough into ropes as
thick as a finger, and cut each rope into 2 cm/1 inch
pieces.

Form these pieces into oval shapes, and drop the
gnocchi into a large pan of water that is just about to
boil. Bring to the boil, then reduce the heat and simmer
briefly. Carefully drain the gnocchi.

Cut the raw salmon into strips. Bring the white wine
sauce to a boil and stir in the cream. Remove from the
heat, add the spinach gnocchi and carefully fold in the
salmon strips. Allow to stand for 2-3 minutes.

Serve garnished with
rocket and ground black pepper.
