Ingredients

  • 4 x 200 g/7 oz salmon cutlets

  • Salt

  • Freshly ground black pepper

  • 100 ml/31/2 fl oz olive oil

  • 2 garlic cloves, peeled

  • 1 large fresh red chili

  • 1 bunch of parsley

  • Oil for frying

Serves 4


Method:

  1. Season the salmon cutlets with salt and pepper.

  2. Heat about half of the olive oil in a cast-iron ridged grill pan and grill the salmon on both sides until crisp.

  3. Heat the remaining olive oil in another pan. Sauté the sliced garlic and chili and sprinkle over the salmon. From time to time, baste with olive oil.

  4. Fry the parsley sprigs in hot oil and drain well on kitchen paper.

  5. Serve the salmon with the fried parsley and some fresh baguette.
