Ingredients

For the dough:

  • 15 g/1/2 oz fresh yeast

  • 500 g/1 lb strong white bread flour

  • 500 ml/16 fl oz lukewarm water

  • 1 egg

  • 2 tablespoons olive oil

  • Salt

For the topping:

  • 250 g/8 oz raw salmon fillet, skinned

  • 1 bunch of spring onions

  • 400 ml/14 fl oz soured cream

  • Wasabi (Japanese horseradish)

  • Salt

  • Sugar

  • 30 g/1 oz root ginger, sliced and marinated

  • 1/2 bunch of fresh coriander

Serves 6


Method:

  1. Mix the yeast with a little flour and lukewarm water to form a dough and leave for 10 minutes. Add the remaining ingredients and knead until the dough is smooth. Cover and set aside in a warm place for 30 minutes.

  2. Cut the salmon fillet into thin slices. Wash the spring onions and cut them diagonally into thin rounds. Mix the soured cream with the wasabi and season with salt and sugar.

  3. Divide the dough into 6 equal-sized pieces. Roll the dough out on a floured smooth surface to form small round pizzas, shaping the edge with your hands. Rest for 10 minutes. Preheat the oven to 220°C(425°F), Gas Mark 7.

  4. Spread 2 tablespoons soured cream over each pizza and bake in the preheated oven for 10-15 minutes until crisp.

  5. Top the hot pizzas with salmon slices, spring onions and sliced ginger and serve immediately, garnished with fresh coriander. The heat of the pizza is sufficient to cook the salmon and it stays juicy this way.
