Sautéed Salmon with Herb Coating Recipe
Ingredients

800 g/13/4Ib raw
salmon fillet, With skin
-
1 tablespoon
sugar
-
1 tablespoon salt
-
1 tablespoon
crushed black peppercorns
-
1 teaspoon
crushed fennel seeds
-
1 teaspoon crushed
coriander seeds
-
Oil for
frying
-
150 ml/1/4
pint butter sauce
-
Lemon juice
-
Salt
-
Cayenne pepper
Serves 4
Method:
-
Scale the skin side of the salmon and make small
incisions in the skin every 5 mm/1/4 inch to allow the
fat to drain out while cooking.

Coat the salmon with
sugar, salt and crushed spices, cover and refrigerate
in this marinade for about 30 minutes.

Remove any excess
marinade and cut the salmon fillet into 4 portions.
Sauté, skin-side down, in hot oil in a non-stick pan.

Preheat the oven to 220°C (425°F), Gas Mark 7, and bake
the salmon for 3 minutes until the caramelized sugar
turns the skin nice and crisp.

Heat the butter sauce and
season with lemon juice, salt and cayenne pepper.

Serve the salmon with the seasoned butter sauce and some
mashed herby potatoes (mashed potatoes with chopped
herbs, e.g. tarragon, chervil and parsley).
