Sautéed Salmon with Basil Sauce and Tomatoes Recipe
Ingredients

500 ml/16 fl
oz white wine sauce

2 tablespoons
whipped cream
-
1/2 bunch of basil, cut into
strips

4 x 200 g/7 oz raw salmon steaks
-
Salt
-
Freshly
ground white pepper

Olive oil for frying

200 g/7 oz
cherry tomatoes, halved

Sugar
Serves 4
Method:

Bring the white wine sauce to the boil and fold in the
whipped cream and basil just before serving.

Season the
salmon steaks with salt and pepper, sauté in hot olive
oil for 3 minutes on each side, then keep warm in a low
oven.

In the same
pan, sauté the cherry tomatoes with a pinch of sugar
until softened, and season with salt and pepper.

Arrange the
salmon on 4 warm serving plates with the white
wine sauce and cherry tomatoes.
Note: Broad
noodles, potatoes or
rice are great side dishes for this delicious
summer meal. When buying the tomatoes, make sure
that they are really ripe.
