Ingredients

  • 3 egg whites

  • 300 g/10 oz plain flour

  • 1 teaspoon baking powder

  • 350 ml/12 fl oz beer

  • 3 egg yolks

  • 8 tablespoons oil

  • Salt

  • 2 tablespoons coarsely ground mixed pepper

  • 800 g/1 3/4Ib raw salmon fillet, skinned

  • 1 bunch of dill

  • 1 bunch of parsley

  • 1 handful of fresh chervil

  • 2 bunches of chives

  • Juice of 1 lemon, organically grown

  • 2 tablespoons olive oil

  • 200 mll7 fl oz natural yogurt

  • 100 ml/31/2 fl oz crème fraiche 

  • Sugar

  • Oil for baking

Serves 4


Method:

  1. For the batter, whisk the egg whites until quite stiff. Combine the flour, baking powder, beer, egg yolks and oil in a tall container and whisk until smooth with a hand blender. Carefully fold in the egg whites and season with salt and coarsely ground pepper.

  2. Cut the salmon fillet into 5 cm/2 inch pieces and salt lightly.

  3. Rinse the herbs and shake dry. Remove the eaves from the dill, parsley and chervil. Cut one bunch of chives into 3 cm/1 inch pieces.

  4. Season the herbs with a few drops of lemon juice, olive oil, salt and pepper, and set aside.

  5. For the yogurt sauce, combine the yogurt and crème fraiche and season with the remaining lemon juice, a pinch of salt, sugar and pepper to taste.

  6. Finely chop the remaining chives and add to the mixture.

  7. Dip the salmon pieces in the batter and sauté in hot oil until gold­en brown. Drain on kitchen paper and serve with the herb salad and yogurt sauce.
