Main Dish Recipes - Salmon with Mussels Wrapped in Foil Recipe

Ingredients

  • 600 g/11/4lb raw salmon fillet

  • 30 live mussels

  • Salt

  • Freshly ground white pepper

  • Juice of 1/2 lemon, organically grown

  • 2 tablespoons roughly chopped mixed fresh herbs

  • 40 g/11/2 oz unsalted butter

  • 100 ml/31/2 fl oz dry white wine

Serves 4


Method:

  1. Cut the salmon fillets into 3 cm/1 inch square pieces. Place the mussels in a large bowl and cover with cold water. Leave for 1 hour, then rinse and drain, discarding any mussels that are cracked or open.

  2. Cut some baking parchment into 60 cm/24 inch squares, brush lightly with water and fold along the middle.

  3. Season the salmon fillets and mussels with salt, pepper and lemon juice. Place some salmon and mussels on each piece of parchment.

  4. Sprinkle with chopped herbs, dot with butter and sprinkle with white wine.

  5. Fold the paper over the filling to make rectangular parcels.

  6. Bake in a preheated oven at 220°C (425°F), Gas Mark 7 for about 8 minutes. Remove and open at the table.
