Salmon

Ingredients

2 leeks

30 g/1 oz unsalted
butter

3 tablespoons fish stock

Freshly ground black
pepper

Freshly grated nutmeg

125 g/4 oz softened
butter

1 bunch of mixed
herbs (parsley, chervil, dill, tarragon)

tablespoon ground mustard
-
1 teaspoon hot
mustard Cayenne pepper

4 x 180 g/6 oz raw
salmon fillets, skinned

Juice of 1/2 lemon,
organically grown
Serves 4
Method:

Cut the leeks in half, rinse thoroughly and cut in
diagonal strips. Heat briefly in the hot butter and add
the fish stock.

Cook until some of the liquid has
evaporated. The leeks should be tender yet still a
little firm since they will be baked with the salmon in
the oven. Generously season with salt, pepper and
nutmeg.

Beat the softened butter and beat in the
chopped herbs, mustard, salt and cayenne pepper.
Refrigerate.

Marinate the salmon fillets with salt, pepper and lemon
juice for a few minutes.
o Spread the leeks out evenly in an oval casserole dish.
Place the salmon fillets on top of the leeks and top
with pieces of herb butter.

Preheat the oven to 85°C
(185°F). Bake for about 45 minutes.
Fresh baguette and
potatoes go especially well with this dish.
Note:
85°C-salmon gets its name from the light and gentle way
in which it is prepared. This dish is full of flavor
and easy to digest.
