Scrambled Eggs with Basil on Pumpernickel and Marinated
Salmon Recipe
Ingredients

6 eggs
-
2 tablespoons
crème
fraiche
-
A dash of mineral water
-
Salt
-
Freshly ground black
pepper
-
250 g/8 oz marinated salmon, cut into strips
-
30 g/1 oz unsalted
butter
-
A few sprigs of
basil
-
Butter for spreading
-
4 slices
pumpernickel bread
Serves 4
Method:
-
Lightly beat together the eggs,
crème fraiche and
mineral water. Season with salt and pepper and stir in
the salmon strips.
-
Melt the butter in a non-stick frying
pan. Add the egg mixture and cook until set, stirring
from time to time with a wooden spoon.
-
Cut the basil
leaves into thin strips. Butter the pumpernickel bread
and top with the scrambled eggs.
-
Sprinkle with basil and
check the seasoning.
