Salmon Tartare with Basil Recipe
Ingredients

600 g/11/4lb raw
salmon fillet, skinned

1 shallot, finely chopped

3 tablespoons
extra-virgin olive oil

Freshly ground coriander
-
Salt
-
Freshly ground white
pepper

1/2 bunch of basil

Lettuce leaves to
garnish
Serves 4
Method:

Cut the salmon fillet into very small cubes. Season with
the shallot, olive oil, coriander, salt and pepper.

Cut
the basil leaves into thin strips, keeping a few leaves
whole for the garnish, and mix into the salmon mixture.

Arrange the lettuce and reserved basil leaves in a
circle on each serving plate.

Place the salmon tartare
in the centre and serve with some sliced baguette.
Note: This
recipe can also be prepared with smoked salmon, in
which case use less olive oil. Salmon tartare makes
a great appetizer or hors d'oeuvre served with a
glass of champagne.
