Easy Dishes Recipes - Salmon Salad Sandwich Recipe

Ingredients

  • 500 g/1 lb salmon fillet, skinned and sliced

  • Salt

  • Freshly ground black pepper

  • 1 tablespoon olive oil

  • 2 hard-boiled organic eggs

  • 2 medium dill pickles (or pickled cucumbers)

  • 150 g/5 oz mayonnaise

  • 1 tablespoon crème fraiche

  • 1 tablespoon Dijon mustard

  • A pinch of hot paprika

  • 1 tablespoon chopped capers

  • 1 onion, diced

  • 1 iceberg lettuce

  • 16 slices of bread

  • 3 ripe tomatoes, sliced

Serves 4


Method:

  1. Season the salmon fillet with salt and pepper. Heat the olive oil in a pan and quickly sauté the salmon.

  2. Remove from the pan, allow to cool and then flake with a fork.

  3. Peel and chop the eggs. Dice the dill pickles. Mix together the mayonnaise and crème fraiche.

  4. Season with mustard, paprika, salt and pepper until spicy and then fold in the salmon, pickles, chopped egg, capers and onions.

  5. Cut the iceberg lettuce in half, rinse well and shake or pat dry. Remove the stalk and separate into bite-sized leaves.

  6. Layer the lettuce, salmon mixture and sliced tomatoes on 8 slices of bread. Cover with the remaining bread slices and cut in half diagonally.

Note: These delicious sandwiches are ideal for summer picnics, especially when complemented by a glass of cool, fruity rose wine.
