Salmon Carpaccio with Truffle Oil Recipe
Ingredients

4 tablespoons
extra-virgin

olive oil

1 teaspoon
white truffle oil

Juice of 1/2 lemon

Salt
-
Freshly ground black
pepper

400 g/14 oz raw
salmon fillet, skinned and thinly
sliced

6 tablespoons
mayonnaise
-
2 tablespoons cream
-
A few chives,
snipped
Serves 4
Method:
-
Season olive oil, truffle oil, and lemon juice with salt
and pepper and mix thoroughly.

Distribute onto 4 flat
plates and place thin slices of salmon flat on top of
the sauce.

Thin mayonnaise with cream. Using a spoon,
distribute onto salmon.

Garnish each serving with
freshly chopped chives and serve with fresh baguette.
Note:
The truffle oil turns this carpaccio into a
delicacy. If desired one can additionally grate
white truffles over the salmon.
