Ingredients

3 tbsp
best-quality olive oil
-
400g/14oz raw
salmon without skin, thinly sliced

juice of 1 lemon
-
1 tbsp red
peppercorn, crushed
-
sea salt
-
a few sprigs of
dill
Serves 4
Method:
-
Brush 4 serving plates with a small amount of olive oil,
then arrange the sliced salmon on top.
-
Mix the remaining
olive oil with the lemon juice and drizzle over the
salmon. Sprinkle with the red peppercorns and sea salt.
Garnish with dill.

Serve immediately or the
lemon juice will turn the salmon white.
