Salmon Burger with Tomatoes, Red Onion and Avocado Recipe
Ingredients

150 g/5 oz cherry
tomatoes
-
1 red onion
-
1 avocado
-
Juice of 1 lemon
-
2 tablespoons
crème
fraiche
-
1 tablespoon mayonnaise (refer
recipe)
-
Salt
-
Freshly ground black
pepper
-
150 g/5 oz gravlax
-
4 crisp bread rolls,
with poppy seeds
-
1 chicory, washed
and separated into leaves
Serves 4
Method:
-
Rinse and slice the cherry tomatoes. Peel and thinly
slice the red onion. Cut the avocado in half, peel and
remove the stone.

Using a hand blender, puree one
avocado half together with the lemon juice, crème
fraiche and mayonnaise. Season with salt and pepper.

Slice the other avocado half and sprinkle with the rest
of the lemon juice.
Thinly slice the gravlax.

Cut the rolls in half and spread with the pureed avocado
mixture. Arrange the chicory leaves, cherry tomatoes,
red onion and gravlax on roll.

Sandwich together with
the other half of the roll and serve.
