Salmon Bites with Capers Recipe
Ingredients

500 g/1 lb salmon
fillet, skinned

Freshly ground white
pepper

1/2 teaspoon fresh lemon thyme leaves

1 teaspoon finely
chopped parsley

3 tablespoons olive
oil for frying

2 hard-boiled eggs, peeled

1 tablespoon small
capers
-
1 anchovy fillet
-
1/2 teaspoon Dijon
mustard

2 tablespoons
extra-virgin olive oil

Lettuce leaves, for
serving
Serves 4
Method:
-
Cut the salmon fillet into 2 cm/1 inch cubes. Combine
the salt, pepper, lemon thyme leaves and parsley and dip
the salmon cubes into this mixture. Heat the olive oil
in a non-stick frying pan and quickly sauté the salmon
on all sides.

Meanwhile, finely chop the eggs, capers
and anchovy fillet. Mix with the mustard, salt, pepper
and 1 tablespoon olive oil.

Remove the salmon cubes from
the pan and place 1 teaspoon of the egg mixture on each
salmon piece. Pierce each one with a cocktail stick and
arrange the salmon bites on a bed of lettuce leaves.

As
a finishing touch, sprinkle with the remaining olive oil
before serving.
Note:
Serve these delicious bite-sized canapes with an
aperitif to your guests. Served on cocktail sticks,
they are easy to eat and go especially well with
prosecco or champagne.
