Potato Omelet with Smoked Salmon and Broad Beans Recipe
Ingredients

6 eggs
-
2 tablespoons
crème
fraiche
-
A dash of mineral water
-
Salt
-
Freshly ground black
pepper
-
250 g/8 oz marinated salmon, cut into strips
-
30 g/1 oz unsalted
butter
-
A few sprigs of
basil
-
Butter for spreading
-
4 slices
pumpernickel bread
Serves 4
Method:
-
Cook beans in
boiling salted water for one minute until al
dente and rinse under cold water.

Peel slightly
cooked potatoes and cut in 1 cm thick slices.
Heat oil in as saucepan and cook potatoes on
both sides until golden brown.
-
Add diced
onions, garlic and bay leaves and continue to
cook for another 4 minutes.
-
Cut smoked
salmon in 1/2 cm slices and place in pan.
-
Break the
eggs, whisk and evenly distribute over potatoes.
Season and cook over medium heat until the eggs
are set.
