Easy Dishes Recipes - Potato Omelet with Smoked Salmon and Broad Beans Recipe

Ingredients

  • 6 eggs

  • 2 tablespoons crème fraiche

  • A dash of mineral water

  • Salt

  • Freshly ground black pepper

  • 250 g/8 oz marinated salmon, cut into strips

  • 30 g/1 oz unsalted butter

  • A few sprigs of basil

  • Butter for spreading

  • 4 slices pumpernickel bread

Serves 4


Method:

  1. Cook beans in boiling salted water for one minute until al dente and rinse under cold water.

  2. Peel slightly cooked potatoes and cut in 1 cm thick slices. Heat oil in as saucepan and cook potatoes on both sides until golden brown.

  3. Add diced onions, garlic and bay leaves and continue to cook for another 4 minutes.

  4. Cut smoked salmon in 1/2 cm slices and place in pan.

  5. Break the eggs, whisk and evenly distribute over potatoes. Season and cook over medium heat until the eggs are set.
