Marinated Salmon with Blinis and Soured Cream Recipe
Ingredients

125 g/4 oz
buckwheat flour

125 g/4 oz plain flour

10 g/1/3 oz fresh yeast

20 g/2/3 oz unsalted
butter
-
250 ml/8 fl oz milk

1 whole egg
-
2 eggs, separated
-
Salt
-
Clarified butter for
frying
-
100 ml/31/2 fl oz soured cream
-
300
g/10 oz marinated salmon
Serves 4
Method:

Mix
the
flours together
in a
bowl. Make a well in the centre of the flour mixture and
add the yeast. Stir in the melted butter and lukewarm
milk and set aside for 10 minutes to rise.

Stir in the
whole egg and egg yolks until the mixture has a smooth
consistency.

In a clean, dry bowl, whisk the egg whites
with a little salt until stiff peaks form, then fold
into the batter and leave to rise at room temperature
for 30 minutes.

Heat the clarified butter in a frying pan. Drop spoonfuls of batter into the pan so they spread
out to a diameter of about 6 cm/2 inches Sauté in the
hot butter until set and golden brown on both sides.

Remove from the pan and drain on kitchen paper.
Immediately brush the soured cream onto the hot blinis
and place a thin slice of marinated salmon on top.
Note:
Blini dough when stored in the refrigerator takes longer
to rise, and therefore the dough can be prepared the
evening before. If you are in a hurry, you can buy
ready-made blinis in many supermarkets.
