Easy Dishes Recipes - Marinated Green Asparagus with Smoked Salmon and Soft Boiled Egg Recipe

Ingredients

  • 500 g/1 lb green asparagus

  • Salt

  • 2 tomatoes

  • 1 leek (white part only), washed

  • 1-2 tablespoons balsamic vinegar

  • 4 tablespoons olive oil

  • Freshly ground black pepper

  • A pinch of sugar

  • 1 tablespoon finely chopped dill

  • 4 fresh organic eggs

  • 350 g/12 oz smoked salmon

Serves 4


Method:

  1. Trim and peel the bottom of each asparagus spear and cook in boiling salted water until al dente Gust tender to the bite). Drain and allow to cool slightly.

  2. Cut the tomatoes in half, then deseed and chop. Finely chop the leek.

  3. Combine the vinegar, olive oil, salt, pepper, chili powder and a pinch of sugar to make a marinade. Add the leek, dill and tomatoes and spoon over the lukewarm asparagus. Marinate briefly.

  4. Boil the eggs for 4 minutes until they just start to get hard. Immediately, place them under running cold water, then peel and carefully cut in half.

  5. Arrange the asparagus salad on 4 plates. Arrange 2 egg halves and the salmon, diced or thinly sliced, around the asparagus. Serve with hot toast.
