Appetizers Recipes - Tortillas Filled with Egg Salad and Smoked Salmon Recipe

Ingredients

  • 5 hard-boiled eggs

  • 1 red pepper

  • 1 cucumber

  • 1 bunch of spring onions

  • 1 iceberg lettuce

  • Olive oil for frying

  • Salt

  • Sugar

  • 2 tablespoons mayonnaise (refer recipe)

  • 1 tablespoon soured cream

  • Freshly ground black pepper

  • 1 packet tortillas

  • 150 g/5 oz sliced smoked salmon

  • 60 g/2 oz alfalfa sprouts

  • 60 g/2 oz radish sprouts

Serves 4


Method:

  1. Peel the eggs and cut each one into 8 pieces. Cut the pepper in half, remove the seeds and cut into 2 cm/1 inch wide strips.

  2. Peel the cucumber, cut in half lengthways and scoop out the seeds. Thinly slice the cucumber and spring onions. Wash and shred the lettuce.

  3. Heat the olive oil and quickly sauté the pepper and spring onions. Season with salt and sugar.

  4. Mix with the mayonnaise, soured cream and a little black pepper. Stir in the egg pieces.

  5. Heat the tortillas briefly in a warm oven. Fill the warm tortillas with shredded lettuce, the egg mayonnaise mixture, salmon slices and sprouts and roll up.

  6. Cut the tortillas diagonally in half and serve warm.
