Salmon in Vegetable Marinade Recipe
Ingredients

1 side of salmon,
about 1.3 kg/3 lb

2 medium carrots
-
1 leek
-
A few celery stalks
-
1 fennel bulb
-
3 onions
-
2 oranges,
organically grown
-
1 lemon, organically
grown
-
1 bunch of dill,
finely chopped
-
100 g/31/2 oz salt-sugar mixture (1 part salt, 1 part
sugar)
Serves 4
Method:

Rinse the vegetables, peel and coarsely grate
or dice.
Wash the oranges and lemon in hot water and then cut
into thin slices.

Combine the vegetables. oranges,
lemon and dill with the salt-sugar mixture.

Marinate
the salmon in this mixture and weigh down first with a
board and then with a weight,
such as a
heavy
can. Leave in the refrigerator or a
cool place to marinate for 48 hours. Turn the salmon
over halfway through.

Thinly slice the
marinated salmon and serve with some sliced baguette or
small potato pancakes.
Note: This dish tastes very mild and fresh and
can be kept in the refrigerator for several days.
Leftover salmon can be tossed with tagliatelle in
cream sauce, or made into salmon tartare or a salmon
spread.
