Salmon Spread Recipe

oz low-fat quark

10 g/1/3
oz fresh horseradish, freshly
grated

60 ml/2
fl oz double cream

Salt

Freshly ground
white pepper

Juice of 1/2 lemon,
organically grown

60 g/2 oz poached
salmon
-
80 g/21/2
oz
smoked salmon, finely chopped
Serves 4
Method:

Mix together the
cream cheese, low-fat quark and cream. Season with
salt, pepper and lemon juice.

Using a fork, flake
the poached salmon into pieces and fold into the
cream cheese with the smoked salmon.

Poached salmon
can be replaced with the equivalent amount of smoked
salmon, creating a slightly stronger taste.
Note:
Salmon spread is delicious, especially on
fresh
baguette, toast or
whole-meal bread. It
also goes very well with hot boiled potatoes.
