Salmon Fillet with Pepper on Toasted Baguette Recipe
Ingredients

2 yellow
peppers

2 red
peppers

3 garlic
cloves, peeled

tablespoons olive oil

Sugar

1 dash of
wine vinegar

Salt

Cayenne
pepper

500 g/1
lb
salmon fillet
-
Freshly
ground black pepper

Olive oil for frying and
sprinkling

1 French baguette
-
1/2 bunch of
parsley, finely chopped
Serves 4
Method:

Cut the peppers in half, remove the seeds and peel off
the skin with a vegetable peeler. Slice all the peppers
into long julienne stripes.

Coarsely chop 2 garlic
cloves and cook in the hot olive oil until soft and
translucent. Add the peppers, sprinkle with a pinch of
sugar and allow to caramelize lightly.

Add a dash of
wine vinegar, cover the pan and simmer over a low heat
until reduced. The peppers should be tender but not too
soft. Add some water if necessary. Season with salt and
a pinch of cayenne pepper.

Cut the salmon fillets diagonally into 1 cm/1/2 inch
slices and season with salt and pepper.

Sauté the salmon in some hot olive oil until golden
brown on both sides.

Slice and toast the baguette and sprinkle with olive
oil. Cut the remaining garlic clove in half and rub over
the toast.

Mix the parsley into the peperonata and serve
with the sautéed salmon and baguette.
