Orange-Glazed Salmon Recipe
Ingredients

1 side of
salmon, about 1 kg/2 lb

1/2 bunch of dill,
chopped
-
1/2 bunch of
fresh coriander, chopped
-
2
tablespoons sugar
-
2
tablespoons coarse sea salt
-
1 tablespoon
crushed coriander seeds
-
1 tablespoon
crushed fennel seeds
-
1 teaspoon
coarsely ground black pepper
-
1 teaspoon
thinly sliced fresh root ginger

1 tablespoon
red peppercorns Oil for frying
For the
glaze:
-
1 orange,
organically grown
-
Juice of 4 oranges,
freshly squeezed
-
2
tablespoons thin-cut marmalade
For the
garnish:
Serves 4
Method:
-
Scale the side of salmon under running cold water, pat
dry and then pullout any bones, using tweezers. Make
small incisions in the skin every 5 mm/1/4 inch to allow
the fat to drain out while cooking.

Mix all the remaining ingredients together and use to
coat the salmon fillet on both sides. Cover with
Clingfilm and marinate for 12 hours, turning the salmon
over after 6 hours.

Carefully remove any excess marinade from the salmon
fillet with the back of a knife. Smoke the salmon in a
covered wood chip smoker for about 20 minutes.

To make the glaze, thinly peel the orange and boil the
peel, juice and marmalade until it has a syrupy
consistency.

Cut the salmon in 200 g/7oz pieces.
Sauté,
skin-side down, in a little hot oil for 5 minutes.

Brush the glaze over the salmon and
sauté for 6-10
minutes - the salmon skin should be crisp and lightly
browned.

Arrange on 4 serving plates and brush with the remaining
glaze. Sprinkle with red peppercorns and garnish with
dill or fennel leaves.
