Ingredients

ml/7 fl oz
natural yogurt

200 ml/7 fl oz
soured cream

Salt

Freshly
ground white pepper

1 teaspoon
finely chopped fresh coriander

5 sheets gelatine

Juice of 1
lemon

200 ml/7
fl oz whipped cream

280 g/9
oz smoked brill, sliced

g/7 1/2 oz smoked
salmon, sliced
Serves 8
Method:
-
Whisk the yogurt and soured cream in a bowl until
smooth. Season with salt, white pepper and coriander.

Dissolve the soaked gelatine in heated lemon juice and
slowly stir into the yogurt mixture. Carefully fold in
the whipped cream with a metal spoon.

Line
a 1-litre/12/3-pint loaf tin with Clingfilm and
line with the brill slices in the tin so that they hang
about 5 cm/2 inches over the edge of the tin.

Spread a
layer of yogurt mousse over the brill and arrange some
smoked salmon slices on top of the mousse.

Repeat the
layers of yogurt mousse and salmon until the tin is
full. Cover with the overlapping brill slices, seal with
the Clingfilm and refrigerate for at least 3 hours.

Turn
out the loaf before serving, removing the Clingfilm,
and cut with a very thin, sharp knife into 2 cm/1 inch
slices.

Serve
with toasted baguette. Dry white wine complements this
dish.
