Hot Smoked Salmon with Poached Egg and Hollandaise Sauce Recipe
Ingredients

White wine
vinegar for poaching
-
4 organic eggs, very fresh
-
4 slices of
bread, lightly toasted
-
4 teaspoons cream cheese
-
8 tablespoons
Hollandaise sauce (refer recipe)
-
1/2 bunch of
chives, finely chopped
-
4 x 100 g/3 1/2
oz pieces hot smoked salmon
Serves 4
Method:
-
Heat the water in a
deep saucepan. As soon as the water starts to boil,
add the vinegar.
-
Break the eggs into a ladle (one
egg at a time) and slowly drop into the boiling
water. Using a spoon, move each egg back and forth
to create an attractive shape.

Simmer the eggs for
about 2-3 minutes - poached eggs should have soft
yolks.
-
Meanwhile, spread the toast with the cream
cheese.

Carefully remove the eggs from the water,
one at a time, and drain on kitchen paper.

Place the
eggs on the toast and top each one with 2
tablespoons Hollandaise sauce.
-
Sprinkle with chives
and serve each toast with a piece of hot smoked
salmon.
