Cold Sautéed Salmon a la Glassblower Recipe
Ingredients

2 carrots,
peeled
-
1 leek, cut in
half

2 red onions,
peeled
-
2 tablespoons
sunflower oil
-
2 tablespoons
sugar
-
125 ml/4 fl oz
fruit vinegar
-
750 m1/1 1/4
pints water
-
1/2 teaspoon
juniper berries
-
1/2 teaspoon white peppercorns
-
3
cloves
-
1/2 teaspoon
mustard seeds
-
2 bay leaves
-
1/2 lemon,
sliced
-
8 x 80 g/2 1/2 oz
raw salmon fillets
-
Salt
-
Freshly ground
white pepper
-
Flour for dusting
-
Oil for frying
-
Sprigs of dill
Serves 4
Method:

Diagonally slice the carrots,
leek
and onions diagonally and quickly
sauté in the oil.
Sprinkle with sugar, then allow to caramelize slightly.

Pour in the vinegar and water. Add the vegetables and
lemon slices and simmer for 10 minutes.

Season the salmon pieces with salt and pepper, dust with
flour and sauté in hot oil until golden brown.

Generously season the vegetable mixture with vinegar and
sugar.

Place the salmon in this mixture, cover and leave
to marinate in the refrigerator, preferably overnight.

Just before serving, mix in the dill. Serve with new
potatoes boiled in their skins, pumpernickel or brown
rye bread.
