Potatoes Recipe - Potato Sticks
Ingredients

1 large potato, peeled and
cooked

2 egg yolks

3 tbsp (45ml) butter

1 cup (250ml) self-rising flour

pepper to taste

1 tbsp (15ml) chopped fresh
chives

1 egg, beaten

sesame seeds, to garnish
Method:

Mash
potato with egg yolks and butter until creamy. Beat
in flour, pepper and chives to form a dough. Chill
for 1 hour.

On a
floured board, roll out dough to 1/2 inch (1cm)
thick. Cut into strips 2 1/2 inches (6cm) long, 1/2
inch wide. Twist, brush lightly with beaten egg and
sprinkle with sesame seeds. Bake for 10 minutes at
400F (200C) until crisp and brown. Cool and serve as
appetizers.

Instead of sesame seeds, use grated cheese of caraway
seeds, to taste.
