Potatoes Recipe - Potato Cup

Ingredients

  • medium old potatoes

  • oil


Method:

  1. Scrub the skins to remove dirt and prick with a skewer several times. Place potatoes well apart on a rack and bake at 350F (180C) for 1 hour or until tender (or microwave on HIGH 10 minutes). Let cool.

  2. When potatoes are cool enough to handle, cut in half and scoop out the pulp, leaving a 1/2 inch (1cm) thick shell. Mash the potato pulp and set aside to use in filling of your choice.

  3. Brush potatoes inside and out with oil and arrage on a greased oven tray, cut side up. Bake at 400F (200C) for 10 minutes.

  4. Potatoes are now ready for filling.
