Potatoes Recipe - Herbed Potatoes
Ingredients

2 small new potatoes per
person, lightly scrubbed

1 tsp (5ml) butter per 2
potatoes

2 tsp (10ml) chopped fresh
parsley or basil, per 2 potatoes
Method:

Place potatoes in a pan and just cover with boiling
water. Bring to a boil and simmer until tender,
approximately 20 minutes. (Alternatively prick
potatoes with a fork, crowd into a small dish, cover
with a lid or plastic wrap and microwave on HIGH,
allowing 1 minute per potato. Let stand 2 minutes.

Drain, Melt butter in a pan, add parsley and
potatoes, and coat potatoes well with parsley butter
(or microwave butter with parsley on HIGH 1 minute.
Remove from microwave, add potatoes and shake well
to cover). Serve immediately.
TASTY
VARIATION:
* Use 2
tsp (10ml) per person of any chopped fresh herbs or a
sprinkle of freshly ground black pepper, to taste.
