Potatoes Recipe - GREEN HERB SOUP
Ingredients

1 1/2 tbsp (20ml) butter

6 green onions, whites and
greens sliced

1 large potato, peeled and
diced

4 outer lettuce leaves, washed
and torn into small pieces

2 cups (500ml) water

juice of 1/2 lemon

pepper to taste

3 tbsp (45ml) chopped fresh
herbs (see below note)

1/2 cup (125ml) cream
Method:

Melt
butter, add green onions and fry over low heat until
tender (or microwave butter and green onions
together on HIGH 1 minute). Add diced potato and
stir for 1 minute (or microwave on HIGH 30 seconds,
then place in a pan).

Add
lettuce to boil. Simmer for 20 minutes. Stir in
lemon juice and pepper, then, if using a blender,
add herbs and blend until smooth. Or push soup
through a sieve, then add herbs. Add cream and
chill.
Note:
Use any fresh herbs, or a mixture of herbs: basil,
parsley, mint, thyme, rosemary, sage, sorrel.
