Potatoes Recipe - GREEN HERB SOUP

Ingredients

  • 1 1/2 tbsp (20ml) butter

  • 6 green onions, whites and greens sliced

  • 1 large potato, peeled and diced

  • 4 outer lettuce leaves, washed and torn into small pieces

  • 2 cups (500ml) water

  • juice of 1/2 lemon

  • pepper to taste

  • 3 tbsp (45ml) chopped fresh herbs (see below note)

  • 1/2 cup (125ml) cream


Method:

  1. Melt butter, add green onions and fry over low heat until tender (or microwave butter and green onions together on HIGH 1 minute). Add diced potato and stir for 1 minute (or microwave on HIGH 30 seconds, then place in a pan).

  2. Add lettuce to boil. Simmer for 20 minutes. Stir in lemon juice and pepper, then, if using a blender, add herbs and blend until smooth. Or push soup through a sieve, then add herbs. Add cream and chill.

Note: Use any fresh herbs, or a mixture of herbs: basil, parsley, mint, thyme, rosemary, sage, sorrel.
