Fettuccine with Potato and Tomato Sauce

 
 

Potatoes Recipe - Fettuccine with Potato And Tomato Sauce

Ingredients

  • 1 lb (450g) fettuccine, cooked

SAUCE

  • 1 1/2 tbsp (20ml) butter

  • 2 green onions, diced

  • 2 celery stalks, diced

  • 1/2 green pepper, diced

  • 1 zucchini, diced

  • 1 large potato, peeled and diced

  • 4 slices bacon, diced

  • 1 2/4 cups (440ml) canned tomatoes with liquid

  • 1 cup (250ml) water

  • 1 cube chicken stock

  • pinch dried thyme

  • 1 clove garlic, crushed


 

Method:

  1. Melt butter, add all vegetables (except tomatoes) and bacon, gently fry until bacon fat becomes clear. Add all remaining ingredients. Bring to a boil and simmer for 30 minutes. (Alternatively, microwave butter, green onions and bacon on HIGH 2 minutes. Add diced potato and cook 2 minutes. Add remaining ingredients and microwave on HIGH 10 minutes). Serve with cooked fettuccine.
