Potatoes Recipe - Fettuccine
with Potato And Tomato Sauce
Ingredients
1 lb (450g) fettuccine, cooked
SAUCE
1 1/2 tbsp (20ml) butter
2 green onions, diced
2 celery stalks, diced
1/2 green pepper, diced
1 zucchini, diced
1 large potato, peeled and
diced
4 slices bacon, diced
1 2/4 cups (440ml) canned
tomatoes with liquid
1 cup (250ml) water
1 cube chicken stock
pinch dried thyme
1 clove garlic, crushed
Method:
Melt
butter, add all vegetables (except tomatoes) and
bacon, gently fry until bacon fat becomes clear. Add
all remaining ingredients. Bring to a boil and
simmer for 30 minutes. (Alternatively, microwave
butter, green onions and bacon on HIGH 2 minutes.
Add diced potato and cook 2 minutes. Add remaining
ingredients and microwave on HIGH 10 minutes). Serve
with cooked fettuccine.
