Potatoes Recipe - CURRIED POTATO SOUP

Ingredients

  • 3 tbsp (45ml) butter

  • 3 onions, sliced

  • 6 medium potatoes, peeled and sliced

  • 1 tbsp (15ml) curry powder

  • 2 cubes chicken stock

  • 1 tbsp (15ml) tamarind sauce (see below note)

  • 2 cups (500ml) water

  • 6 ice cubes with parsley springs set in them (optional)


 

Method:

  1. Melt butter, add onions and gently fry till transparent. Add potatoes, curry powder, crumbled stock cubes, tamarind sauce and cover with water. Bring to a boil and simmer for 30 minutes. Blend or push through a sieve. Chill thoroughly before serving.

Note : Tamarind sauce can be replaced by 1 tbsp (15ml) lemon juice.
