Potatoes Recipe - CURRIED POTATO SOUP
Ingredients

3 tbsp (45ml) butter

3 onions, sliced

6 medium potatoes, peeled and
sliced

1 tbsp (15ml) curry powder

2 cubes chicken stock
-
1 tbsp (15ml) tamarind sauce
(see below note)

2 cups (500ml) water
-
6 ice cubes with parsley
springs set in them (optional)
Method:

Melt
butter, add onions and gently fry till transparent.
Add potatoes, curry powder, crumbled stock cubes,
tamarind sauce and cover with water. Bring to a boil
and simmer for 30 minutes. Blend or push through a
sieve. Chill thoroughly before serving.
Note :
Tamarind sauce can be replaced by 1 tbsp (15ml) lemon
juice.
