1/2 cup (125ml) sour cream,
plain yogurt or cottage cheese
3 tbsp (45ml) freshly chopped
chives or fresh parsley, or 1 slice bacon, finely
diced or shredded
Method:
Rub
a little oil over each potato and wrap in a square
of aluminum foil.
Arrange on a baking tray and bake at 475F (250C) for
40 minutes or until tender (or wrap potatoes in
microwave-proof plastic wrap and microwave on HIGH
10-12 minutes; let stand 2 minutes).
Remove foil or plastic wrap and cut a criss-cross
pattern across the top of each top opens. Gently
squeeze potato until the top opens. Serve with a
dollop of sour cream, yogurt or cottage cheese and
top with chives, bacon
