Salad Tricolore Recipe

 
 

Pasta Recipe - SALAD TRICOLORE

Ingredients

  • 1/2 lb (225g) fresh tomato rotelli or 6 1/2 oz (180g) dried

  • 1 tsp (5ml) peanut oil

  • 1/2 lb (225g) sliced cooked chicken

  • 1/4 cup (60ml) sesame seeds, toasted

  • 1 large bunch spinach or Swiss chard, rinsed and dried, torn into pieces

  • 1 bunch green onions, sliced thinly, including green parts

DRESSING

  • 1/4 cup (60ml) peanut oil

  • 1/4 cup (60ml) olive oil

  • 1/4 cup (60ml) soy sauce

  • 1/4 cup (60ml) rice wine vinegar

  • 1 1/2 - 2 1/2 tbsp (20-40ml) sugar

  • salt and freshly ground black pepper


 

Method:

  1. Cook pasta in boiling salted water until al dente. Drain, rinse under cold water and drain again. Put in a large salad bowl and stir in peanut oil. Cool.

  2. Add chicken and sesame seeds.

  3. TO PREPARE DRESSING: In a jar combine all dressing ingredients and shake well.

  4. Pour dressing over salad. Cover and chill for at least 2 hours.

  5. To serve, toss green onions and spinach through the salad.
