1/2 lb (225g) fresh tomato
rotelli or 6 1/2 oz (180g) dried
1 tsp (5ml) peanut oil
1/2 lb (225g) sliced cooked
chicken
1/4 cup (60ml) sesame seeds,
toasted
1 large bunch spinach or Swiss
chard, rinsed and dried, torn into pieces
1 bunch green onions, sliced
thinly, including green parts
DRESSING
1/4 cup (60ml) peanut oil
1/4 cup (60ml) olive oil
1/4 cup (60ml) soy sauce
1/4 cup (60ml) rice wine
vinegar
1 1/2 - 2 1/2 tbsp (20-40ml)
sugar
salt and freshly ground black
pepper
Method:
Cook
pasta in boiling salted water until al dente. Drain,
rinse under cold water and drain again. Put in a
large salad bowl and stir in peanut oil. Cool.
Add
chicken and sesame seeds.
TO
PREPARE DRESSING: In a jar combine all dressing
ingredients and shake well.
Pour
dressing over salad. Cover and chill for at least 2
hours.
To
serve, toss green onions and spinach through the
salad.
