Ingredients

SPICY SARDINE

  • 4 tbsp (60ml) butter

  • 1 1/2 tsp (7.5ml) lemon juice

  • 1 1/2 tsp (7.5ml) prepared mustrad

  • sardines and pimiento, to grahish


Method:

  1. Combine first three ingredients to make lemon-mustard butter and spread toast or crackers with mixture. Top with 1/2 sardine and a thin strip of pimiento.

Makes 1/3 cup (85ml)


 

SMOKED OYSTER OR MUSSEL

  • 1 quantity lemon-mustard butter

  • 4 oz (110g) can smoked oysters, or mussels

  • finely chopped parsley, to garnish


Method:

  1. Butter toast as for spicy Sardine Canapes. Top each with a smoked ouster or mussel. Sprinkle with finely chopped parsley.


CREAM CHEESE

  • 8 oz (225g) cream cheese, softened

  • 4 oz (110g) can drained , smoked oysters or

  • 1/4 cup (60ml) finely chopped pecans and pinch cayenne pepper or

  • 1/4 cup (60ml) finely chopped chicken and pinch dry mustard and 1 tbsp (15ml) chopped parsley

  • parsley, fresh herbs or watercress, to garnish


Method:

  1. Combine ingredients, spread on toast rounds or crackers and garnish.

Make approximately 1 1/4 cup (310ml)
