Preheat oven to 400F (200C). Sift flour and salt
into a bowl. Work in butter till mixture resembles
breadcrumbs.
Add
sufficient water to form a soft dough. Knead lightly
on floured board. Roll out dough to fit 8 inch
(20cm) quiche pan.
Prick base of crust with fork. Bake pastry crust for
10 minutes.
Layer salmon in pastry crust. Blend egg yolks, eggs,
sour cream, lemon juice, cream, cayenne and black
pepper. Strain and pout into pastry crust. Top with
grated cheese.
Bake
at 375F (190C) for 45-60 minutes or until set and
browned on top. Cut into slices and serve hot or
cold.
