Oyster Cheese Puffs Recipe

 

Party Desserts Recipes - Oyster Cheese Puffs

Ingredients

  • 1/4 lb (110g) butter

  • 1 1/2 cups (375ml) grated sharp cheddar cheese

  • 2 tsp (10ml) sherry

  • 1 egg, separated

  • 2 x 4 oz (110g) cans smoked oysters, drained

  • 32 x 1 1/2 inch (4cm) bread rounds

  • 1 tbsp (15ml) finely chopped parsley

  • paprika, to taste


 

Method:

  1. Beat butter, cheese and sherry together. Add egg yolk and blend well. Whisk egg white till soft peaks form. Fold egg white into cheese mixture.

  2. Place 1 oyster on each round or bread. Top with 1 tsp (5ml) of cheese mixture.

  3. Sprinkle with chopped parsley and paprika. Place on baking sheets. Bake at 450F (230C) for 10m minutes and serve piping hat.
