Party Desserts Recipes - Country Combination Pate'
Ingredients
1 onion, chopped
1 clove garlic, crushed
spring fresh thyme
spring parsley
spring fresh chervil
1/4 cup (60ml) butter
1/2 lb (225g) chicken livers,
cleaned
salt and pepper, to taste
1/4lb (110g) fat pork, roughly
chopped
1/4 lb (110g) lean pork,
roughly chopped
6 slices bacon
Method:
Gently cook onion, garlic and herbs in butter for
1-2 minutes, then add livers diced into 3/4 inch
(2cm) pieces, and cook gently for about 1 minute.
Cool, then season and puree with pork.
Line
a loaf pan with bacon slices and spoon in meat
mixture, covering it with more slices of bacon.
Stand pan in a baking dish half-full of water and
bake at 350F (180C) for 1 hour. Cool, then
refrigerate until firm.
When
chilled, slice pate' and serve on lettuce leaves,
accompanied by triangles of toast.
