Party Desserts Recipes - Chicken Liver Pate'
Ingredients

2 lbs (1kg) chicken livers
-
3/4 cup (185ml) butter
-
2 cloves garlic, crushed
-
5 tbsp (75ml) dry sherry
-
6 tbsp (90ml) brandy
-
1 tbsp (15ml) chopped parsley
-
1/2 tsp (2.5ml) chopped fresh
thyme
-
pinch cinnamon
-
pinch grated nutmeg
-
salt and freshly ground pepper,
to taste

1/4 cup (60ml) whipping cream
Method:
-
Clean chicken livers. Heat 6 tbsp (90ml) butter, add
garlic and cook for 30 seconds. Add chicken livers
and cook for 5 minutes or until almost cooked. Puree
chicken livers and cooking liquid in food processor
or blender. Put in bowl.

Heat
remaining butter. Add remaining ingredients except
cream ad heat through. Pour over chicken livers and
beat well. Stir in cream , taste and adjust
seasoning. Spoon mixture into a serving container,
cover and chill. Serve with crackers.
