Main Dish Recipes - Jambalaya

Ingredients 

  • 1/2 lb. fresh pork Ionian

  • 1 clove garlic

  • 1/2 lb. cured ham

  • 6 small smoked pork sausages

  • 2 Tbs. lard or butter

  • 1 bay. leaf

  • 1 sprig parsley

  • 1 sprig thyme or 1/4 tsp. dried leaf thyme

  • 1 whole clove

  • 1 1/2 quarts beef or chicken broth

  • 1/2 tsp. Tabasco

  • 3/4 tsp. salt

  • 1 cup uncooked rice

Makes 4 to 6 servings


Method:

  1. Cut pork (lean and fat) into cubes about 1/2-inch square. Chop onion and garlic very fine. Dice ham and cut sausage into pieces.

  2. Melt lard in a heavy iron pot or Dutch oven. Add onion, garlic, pork and ham; brown slowly, stirring frequently.

  3. Add sausage, bay leaf, parsley, thyme and clove; cook about 5 minutes. Add broth, Tabasco and salt; bring mixture to a boil.

  4. Add washed rice. Cover and simmer gently a half hour or longer until rice is tender. Stir often to mix well. Season to taste.
