Main Dish Recipes - Imperial Fish Baltimore

Ingredients   

  • 3 Tbs. butter or margarine, divided

  • 1/2 cup diced green pepper

  • 1/4 cup mayonnaise

  • 2 tsps. Lea & Perrins Worcestershire Sauce

  • 1/4 tsp. salt

  • 1/4 tsp. powdered mustard

  • 2 cups flaked cooked white-fish

  • 3/4 cup soft bread crumbs

  • 1/4 cup chopped pimiento

  • 1/2 tsp. paprika

Makes 4 servings


Method:

  1. In a medium saucepan melt 1 Tbs. of the butter. Add green pepper; sauté for 2 minutes.

  2. Remove from heat; stir in mayonnaise, Lea & Perrins, salt and mustard. Gently blend in fish. Turn into a buttered 1-quart casserole.

  3. In a small saucepan melt remaining 2 Tbs. butter. Stir in bread crumbs, pimiento, and paprika. Sprinkle over fish mixture.

  4. Bake in a preheated moderate oven (350°F) until crumbs are golden, about 30 minutes.
