Hiram Walker's Supreme Brandy Burgers
Ingredients

2 shallots (or scallions) finely
chopped
-
4 Tbs. butter
-
1 lb. ground lean chuck
-
1/4 lb. boiled ham,
ground
-
4 Tbs. ice water
-
1 egg slightly beaten
-
Pinch of thyme
-
Freshly ground pepper Flour
-
1 Tbs. oil
-
1/4 cup
beef consommé
-
1/4 cup Hiram Walker
-
Apricot
Flavored Brandy
-
2 Tbs. butter
-
Parsley
Method:
-
Sauté the shallots, add the next 7 ingredients. Wet
hands and shape into patties. Refrigerate for 1
hour.
-
Dust patties with flour; sauté in oil and
keep in warm oven. Add consommé, Apricot Brandy, and
cook five minutes.
-
Add butter and pour over patties.
Sprinkle with parsley.
