Main Dish Recipes - Gourmet French Omelet

Ingredients     

  • 2 2 1/2-oz. jars sliced mushrooms, drained

  • 3 Tbs. Margarine

  • 6 eggs, beaten

  • 1/3 cup milk

  • salt and pepper

  • 3/4 cup (3 ozs.) shredded Cracker

  • Sharp Natural Cheddar Cheese

  • 1 tsp. finely chopped chives

Makes 3-4 servings


Method:

  1. Sauté mushrooms in I Tbs. Margarine. Melt remaining margarine in 10-inch skillet over low heat.

  2. Combine eggs, milk and seasonings; pour into skillet. Cook slowly.

  3. As egg mixture sets, lift slightly with a spatula to allow uncooked portion to flow underneath.

  4. Cover omelet with 1/2 cup Cheese, mushrooms and chives; fold in half and sprinkle with remaining Cheese.
