Main Dish Recipes - Fish and Chips

Ingredients     

  • 1 lb. fresh or frozen firm, white-fleshed fish fillets       

  • 1 lb. potatoes, peeled, (about 3 potatoes)

  • Crisco for deep frying        

  • 1/4 cup flour

  • 1/2 tsp. salt

  • 1 egg yolk

  • 2 Tbs. water

  • 1 Tbs. Crisco, melted

  • 1 egg white, stiffly beaten

  • 1/4 cup flour

Makes 3-4 servings


Method:

  1. Thaw fish, if frozen. Cut into serving-size pieces. Cut potatoes in uniform strips, slightly larger than for French fries.

  2. To make chips: Deep fry potato strips until golden brown in Crisco heated to 375°F. (about 7-8 minutes). Remove, drain on paper towels, and keep warm.

  3. In medium bowl, combine first 1/4 cup flour and salt. Make well in center; add egg yolk, water, and melted Crisco. Stir until batter is smooth. Fold in egg white.

  4. Dip fish in the remaining 1/4 cup flour, then into batter. Deep fry fish until golden brown in Crisco heated to 375°F. (about 1 1/2 minutes on each side).

  5. Sprinkle fish with vinegar, if desired. Sprinkle fish and chips with salt.
