Fillets Baked in Sour Cream
Ingredients

4 tsps. butter or
margarine, divided
-
2 lbs. fish fillets
(sole, haddock or
flounder)
-
1 tsp. salt
-
1/2 tsp. Tabasco pepper sauce
-
1 Tbs. paprika
-
1/4 cup
grated Parmesan cheese
-
1 cup (8 ozs.) sour
cream
-
1/4 cup fine dry bread crumbs
Makes 4 to 6 servings
Method:
-
Grease
2-quart baking dish with 1 tsp. of the butter. Arrange fish in baking dish.
-
Blend salt, Tabasco pepper
sauce, paprika and Parmesan cheese into sour
cream. Spread over fish.
-
Top with bread crumbs and dot with
remaining 3 tsps. butter.
-
Bake, uncovered, in 350°F
oven 30 minutes until fish is easily flaked with a fork.
-
Serve with lemon slices, if desired.
