Main Dish Recipes - Country Cornish Hens

Ingredients  

  • 1/2 lb. bulk pork sausage

  • 2 cups bread cubes, toasted

  • 1 cup chopped, peeled apples

  • 1/2 cup celery slices

  • 1/3 cup raisins

  • 1/3 cup chopped onion

  • 3/4 cup Parkay Margarine, melted

Makes 6 servings


Method:

  1. Brown meat; drain. Add bread, apples, celery, raisins, onion, 1/4 cup margarine, 2 Tbs. sherry and seasonings; mix well.

  2. Lightly stuff hens with dressing mixture; close openings with skewers.

  3. Bake at 400°F for 1 hour or until tender, basting occasionally with combined remaining margarine and sherry.

  4. Garnish with celery leaves, if desired.
